How many greasy french fries, sloppy sandwiches, lackluster burgers can you eat in a week? A month? A year? The same old, same old. Remember when your mother would pack your lunch? Those were the blithe days we miss. Sigh.. how we long for the peanut butter sandwiches, surprise cookies, fruit, a chip or two, bologna and cheese… even a lunchable. With SO MANY things to worry about as a kid, for many of us lunch was not a bother.

With competing priorities, it’s hard to find a suitable lunch in a timely manner. For most of us, lunch is a luxury and finding a healthy, responsible or inexpensive lunch can be a daunting task.

As adults, our tastes have changed from the days of the peanut butter and jelly sandwiches. But Why? My mommy made the best PB&J sandwiches on the planet. Sometimes, she even got creative with recipes. One time, I became ambitious and prepared by OWN lunch – A LIVER SANDWICH ( a bland piece of calves liver shoved between to pieces of white bread). I think I stayed at my single Aunt’s house the night before.

When I proudly took my sandwich out, the kids laughed. I was humiliated. I will never forget my liver sandwich.

A big girl now, I can eat whatever I like.

Like many, my taste for different foods, change. As a vegetarian, I LOVE most vegetables. As a vegetarian who does not eat anything containing acid, hybrid or genetically modified, the food pyramid looks mighty slim.  For the most part of my diet, everything tastes like dirt (LOL) so my best homemade lunch recipes may not be suitable for everyone’s tastes.
